Zesty Grilled Chicken Un-Kabobs – CE
Grilled zucchini, squash and green salad

Ingredients

Prep
  • 6 boneless chicken breasts
  • 2 zucchini
  • 2 squash
  • 1 T minced garlic
  • 1 T ground paprika
  • 1 t ground cumin
  • 1 t ground coriander
  • 1/2 t cayenne pepper
  • 2 T olive oil
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. Cut chicken breasts into bite-sized cubes.
  2. Slice squash and zucchini into medallions.
  3. Combine all ingredients in large zipper bag. Zip to seal and squish to coat.
To Cook
  1. Pour contents of bag onto cookie sheet sprayed with non stick spray in a single layer.
  2. Bake at 350 degrees for 30 minutes or until chicken and vegetables are done.
  3. Serve with green salad.
