Zesty Grilled Chicken – C
Zucchini casserole and dinner rolls

Ingredients
Prep
- 4 zucchini
- 2 T olive oil
- 1/2 t dried thyme
- 2 t minced garlic
- salt and pepper to taste
- 1 C shredded Italian cheese blend
- 6 boneless chicken breasts
- 1 C zesty Italian salad dressing
- 1 t minced garlic
On Cooking Day
- 1 pkg dinner rolls
- 1 8 x 8 foil pan to place on grill
Instructions
To Assemble
- Chop zucchini into bite size pieces and add to 8 x 8 foil pan sprayed with non stick spray.
- Add next4 ingredients and toss well to mix. Top with 1/2 cup shredded cheese. Cover with foil.
- Add last 3 ingredients to large zipper bag. Zip to seal and squish around to mix.
To Cook
- Grill chicken on indoor/outdoor grill or broil.
- Place foil pan with zucchini on grill and cook along side chicken or bake zucchini casserole in 350 degree oven for 25 minutes.
- Serve with dinner rolls.

Zucchini casserole may be assembled in a disposable foil pan and cooked on the upper rack of the outdoor grill while chicken is cooking.
