White Fish in Chunky Tomato Sauce – CE

Ingredients

Prep
  • 6 fish filets any white fish – tilapia, cod
  • 4 oz pimentos jarred
  • 10 oz Rotel diced tomatoes and green chiles
  • 4 oz tomato sauce
  • 1/2 C frozen chopped onions
  • 1 T minced garlic
  • 1/2 t oregano
  • salt and pepper to taste
On Cooking Day
  • 2 bag steamers brown rice
  • 16 oz green beans

Instructions

To Assemble
  1. Place fish fillets in large zipper bag. Drain pimentos and add to fish along with next 5 ingredients. Season with salt and pepper. Zip and gently shake to mix.
To Cook
  1. Heat olive oil in a large skillet over medium-high heat. Add fish and brown fish until flakes easily with a fork.
  2. Remove fish from skillet and pour in sauce. Warm until bubbly and place fish into sauce. Mix well before serving.
  3. Cook rice and green beans according to package directions.
