Unstuffed Cabbage Rolls – W30

Ingredients

Prep
  • 1 cabbage medium
  • 1 1/2 lb ground beef grass-fed
  • 1 c frozen chopped onions
  • 1 t garlic powder
  • 1/2 t salt or to taste
  • 1/4 t black pepper
  • 28 oz can crushed tomatoes
  • 8 oz can tomato sauce
  • 2 T coconut aminos
  • 1 t marjoram or oregano
  • 1 t minced garlic
On Cooking Day
  • 1/2 C water
  • 10 C salad greens
  • 1 bag frozen cauliflower rice

Instructions

To Assemble
  1. Core and chop cabbage and place in a large zipper bag. In a separate zipper bag add ground beef, onion, garlic powder, salt and pepper. Zip and shake to mix.
  2. In a medium container with a lid mix together last 5 ingredients. Season with a pinch of salt and pepper.
To Cook
  1. Cook beef mixture in a large pot over medium-high heat until browned, about 5-7 minutes. Stir in tomato mixture 1/2 C water and continue to cook until mixture begins to bubble and sauce is warm. Add in cabbage, cover and reduce heat to a simmer and cook, stirring occasionally until cabbage is tender, about 8-10 minutes.
  2. Cook cauliflower rice as directed on package.
  3. Serve with cauliflower rice and green salad.
