Tuscan Tortellini Soup – IP1

Ingredients

Prep
  • 1 1/2 lb chicken breasts
  • 1 C frozen chopped onions
  • 3 T minced garlic
  • 28 oz crushed tomatoes
  • 15 oz canned great northern beans
  • 1 bay leaf
  • 1 T Italian seasoning
  • salt and pepper to taste
On Cooking Day
  • 4 C chicken broth
  • 18 oz frozen cheese tortellini
  • 1 C half and half
  • 1/2 C shredded Parmesan cheese
  • 3 C baby spinach
  • 6 C salad greens

Instructions

To Assemble
  1. Cut chicken breasts in half.
  2. Add all ingredients to a large zipper bag. Zip to seal and squish around to mix.
To Cook
  1. Add prepped ingredients and chicken broth to Instant Pot.
  2. Pressure cook on high pressure for 10 minutes. Let natural release for 4 minutes, then release the rest of the pressure. Press cancel.
  3. Press saute (normal). Add cheese tortellini, half and half, and Parmesan cheese to Instant Pot. Cook for about 5 minutes, or until tortellini is heated through.
  4. Add spinach and let wilt down.
  5. Serve with side salad.
