Tomato, Basil Grilled Cheese – CE

Ingredients

Prep
  • 12 slices whole wheat bread
  • 12 mozzarella cheese slices
  • 2 tomatoes large
  • 2 T chopped fresh basil
  • salt and pepper to taste
  • 2 t balsamic vinegar
  • 1/4 C olive oil
  • 3 T grated Parmesan cheese
  • 1/2 t garlic powder
On Cooking Day
  • 6 C salad greens
  • 3 apples

Instructions

To Assemble
  1. Build sandwiches by layering bread, mozzarella cheese and tomatoes; sprinkle with the basil, vinegar, salt and pepper. Top with remaining bread.Store sandwiches in large container with lid.
  2. In a small bowl with lid, combine the oil, Parmesan cheese and garlic powder;
To Cook
  1. Brush the oil/ parmesan mixture over the outsides of each sandwich.Grill sandwiches on skillet or grill pan.
  2. Slice apples. Serve sandwiches with side salad and apple slices.
