Thai Style Egg Bake – CE

Ingredients

Prep
  • cooking spray
  • 12 eggs
  • 2 T soy sauce
  • 2 C deli rotiserre chicken
  • 1 1/2 C bean sprouts fresh or canned
  • 1 green olives
  • 1 watermelon or honeydew
On Cooking Day
  • Sriracha optional

Instructions

To Assemble
  1. Chop beansprouts. Whisk eggs and soy sauce in a large bowl and stir until blended. Add spouts, chicken, and half the green onions. Mix well.
  2. Place mixture in a baking dish sprayed with non stick spray. Cover.
To Cook
  1. Bake at 375 until eggs are set, about an hour.
  2. Serve with salsa, sour cream, and melon.
