Tex Mex Skillet Gnocchi – CE

Ingredients

Prep
  • 1 onion any color
  • 2 bell peppers any color
  • 1 T olive oil
  • 30 oz canned black beans
  • 1 t chili powder
  • 2 t cumin
  • 2 t paprika
  • 2 t minced garlic
  • salt and pepper to taste
  • 2 tomatoes
  • 1/4 C fresh cilantro
  • 1 T lime juice
  • 1/4 t salt
On Cooking Day
  • 24 oz gnocchi found in pasta aisle
  • 2 avocados
  • 8 C salad greens

Instructions

To Assemble
  1. Chop bell peppers and onion into strips and place in small zipper bag with olive oil.
  2. Rinse and drain black beans and add to another large zipper bag along with next 5 ingredients. Zip and shake to mix.
  3. Chop tomatoes and cilantro and add to small bowl with lime juice and salt. This will be the tomato relish.
To Cook
  1. Cook peppers and onion in hot skillet until crisp tender. Remove and set aside.
  2. Add olive oil to skillet and add Gnocchi. Cook until browned.
  3. Pour pepper/onion mix and black bean mixture into the skillet with Gnocchi and mix well. Heat until warmed through.
  4. Serve with tomato relish, avocado and green salad.
