Tator Tot Taco Casserole – C

Ingredients

Prep
  • 3 C deli rotisserie chicken
  • 2 t minced garlic
  • 4 oz can diced green chilies
  • 1 pkg taco seasoning
  • 14 oz can black beans
  • 8 oz frozen corn
  • 2 C shredded Mexican cheese
  • 10 oz red enchilada sauce
On Cooking Day
  • 32 oz frozen tater tots
  • 1 C shredded Mexican cheese
  • 2 oz sliced black olives optional
  • 1 Roma tomato optional
  • 14 oz can pinto beans

Instructions

To Assemble
  1. Shred chicken. Drain and rinse black beans.
  2. Add all ingredients to casserole dish. Mix and cover.
To Cook
  1. Add tator tots to casserole dish.
  2. Bake at 375 degrees uncovered for 30-40 minutes. Add cheese over tator tots during last 5 minutes.
  3. Chop tomato. Garnish casserole with tomatoes and olives.
  4. Heat pinto beans and serve with casserole.
