Tator Tot Meatball Foil Packets – C
mixed vegetables and salad

Ingredients

Prep
  • 1 1/2 lb frozen meatballs
  • 28 oz frozen tator tots
  • 16 oz frozen mixed vegetables
  • 1/4 C BBQ sauce
  • 1 C shredded sharp Cheddar cheese
  • salt and pepper to taste
  • 6 20″ x 20″ foil squares
On Cooking Day
  • 8 C salad greens

Instructions

To Assemble
  1. Lay out foil squares and spray with non-stick cooking spray
  2. In a large bowl mix together meatballs, tator tots and mixed vegetables. Divide mixture and scoop onto each sheet of foil. Drizzle each with BBQ sauce. Sprinkle with cheese.
  3. Fold up foil to make a “packet” like a tent leaving room for heat expansion.
  4. Store on small baking sheet in refrigerator to catch any leaks.
To Cook
  1. Place foil packets on a large baking sheet and bake in 350 degree oven for 20-25 minutes.
  2. Serve with a big green salad.

Best on day 2 or 3.

Either use heavy-duty foil or 2 sheets of regular foil.
