Taco Lasagna – C

Ingredients

Prep
  • 1 lb cooked ground beef
  • 1/2 T garlic powder
  • 1/2 T onion powder
  • 1/2 T cumin
  • 15 oz black beans
  • 10 oz rotel tomatoes and green chilies drained
  • cooking spray
  • 6 flour tortillas
  • 16 oz refried beans
  • 4 C shredded Mexican cheese blend divided
On Cooking Day
  • taco toppings (salsa, sour cream, guacamole, cheese) optional
  • 6 C salad greens
  • 2 avocados sliced

Instructions

To Assemble
  1. Add the first four ingredients to a large bowl and stir to combine.
  2. Drain and rinse the black beans and drain the tomatoes with chilies, and add them to the bowl; stir to combine.
  3. Spray a casserole dish with cooking spray. Layer as follows: tortillas, refried beans, cheese, tortillas, beef mixture, tortillas, cheese. Cover with foil.
To Cook
  1. Bake, covered, at 350 for 25-35 minutes, or until warmed through. Remove the foil and continue to bake for 10 minutes or until cheese is melted. Top with taco toppings as desired and serve with a green salad and sliced avocado.
