Ingredients
Prep
  • 3 C cooked cubed chicken from deli rotisserie
  • 1 T chili powder
  • 1 t ground cumin
  • 1 t onion powder
  • 1 can black beans drained
  • 8 oz frozen corn
  • 1 1/2 C shredded cheddar cheese
  • 24 wonton wrappers or flour tortillas
On Cooking Day
  • 6 C salad greens
  • 2 avocados
  • 1 C sour cream

Instructions
To Assemble
  1. Add the first 6 ingredients to a large bowl, stir to mix.
  2. Spray 12 count muffin tin with non stick spray. Place 2 wonton wrappers in each cup, pressing up the sides. If using flour tortillas, cut into 4 inch circles or squares.
  3. Scoop chicken mixture into each wonton. Sprinkle with cheese. Cover with plastic wrap.
To Cook
  1. Bake uncovered at 375 degrees for 10 – 12 minutes or until wontons are golden and centers are warm.
  2. Garnish with sour cream and avocado.
  3. Serve with green salad.
Recipe Notes

*for crisper wonton bottoms, cook unfilled for 10 minutes, fill, then continue as directed in recipe.
