Sweet Potato, Turkey and Gnocchi Skillet – CE

Ingredients

Prep
  • 1 lb lean ground turkey
  • 1/2 cup frozen chopped onion
  • 1 t minced garlic
  • 1/2 t salt
  • 1/4 t pepper
  • 2 sweet potatoes
  • 2 sage leaves
  • 1 T olive oil
On Cooking Day
  • 24 oz gnocchi found on pasta aisle
  • 8 C salad greens

Instructions

To Assemble
  1. Add ground turkey along with next 4 ingredients to a large zipper bag. Zip and shake to mix.
  2. Cut sweet potatoes into 1/2 inch pieces and add to a separate large zipper bag. Finely chop sage leaves and add to sweet potatoes. Drizzle with olive oil and season with salt and pepper.
To Cook
  1. Pour sweet potatoes onto a large baking sheet sprayed with non stick spray. Bake at 425 degrees for 15 minutes.
  2. While sweet potatoes are roasting, cook ground turkey mixture in a large skillet over medium heat until cooked thoroughly. Remove and set aside.
  3. Add olive oil to skillet and add Gnocchi. Cook, stirring occasionally until browned, about 2-3 minutes per side.
  4. Pour cooked ground turkey and sweet potatoes into the skillet with Gnocchi and mix well. Heat until warmed through.
  5. Serve with a green salad.
