Sun Dried Tomato Feta Stuffed Sweet Potatoes

Ingredients

Needed for Assembly
  • 3/4 C sun dried tomatoes in oil
  • 1/2 bunch parsley
  • 4 oz chopped olives
  • 1 t dried oregano
  • 1 1/2 C feta cheese
  • salt and pepper to taste
  • 6 sweet potatoes
Needed on Cooking Day
  • 10 C salad greens

Instructions

Assembly
  1. Chop the parsley and sun dried tomatoes and add to a bowl with lid along with next 4 ingredients.
  2. Wrap each sweet potato in foil.
Cooking
  1. Place foil wrapped sweet potatoes in slow cooker and cook on low for 7-8 hours.
  2. Remove potatoes, slice open and stuff with sun-dried tomato mixture.
  3. Serve with green salad.
