Spicy Baked Burritos with Pico Salad – C

Ingredients

Prep
  • 32 oz can refried beans
  • 2 t cumin
  • 2 t garlic powder
  • 1 t onion powder
  • 12 burrito size flour tortillas
  • 2 C spanish rice prepared
  • 1 1/2 C Mexican cheese blend divided
  • 6 Roma tomatoes
  • 1 red onion
  • 1 fresh jalapeno pepper
  • 1 T fresh lime juice
  • 1/4 bunch fresh cilantro
  • salt to taste
On Cooking Day
  • 1 can Mexican Style Tomato Sauce
  • 2 avocados sliced
  • 1 bag tortilla chips
  • 1 cup sour cream optional

Instructions

To Assemble
  1. In a bowl combine first four ingredients.
  2. Spread bean mixture in the middle of each of each tortillas and top with rice and cheese, making sure to reserve 3/4 C of cheese for cooking day. Roll burritos and place in a greased baking dish.
  3. Cut tomato into bite sized chunks and add to a bowl with a lid. Slice onion and jalapeno, chop cilantro, and add remaining ingredients to bowl.
To Cook
  1. Drizzle sauce over top of burritos and top with remaining cheese. Bake at 375 for 20 minutes or until warmed through. Serve burritos with pico salad, sliced avocado, sour cream and tortilla chips.
