Spiced Pork with Corn and Peppers

Ingredients

Needed for Assembly
  • 2 one pound pork tenderloins
  • 2 T olive oil
  • 2 t cumin
  • salt and pepper to taste
  • 2 bell peppers any color
  • 1/2 bunch cilantro
  • 4 C frozen corn
  • 2 t chili powder
  • 1 t lime juice
Needed on Cooking Day
  • 2 avocados
  • 1 lime
  • 1/4 C crumbled feta cheese
  • 10 C salad greens

Instructions

Assembly
  1. Add pork loins to a large baking dish (make sure to leave space between them if using 2) sprayed with non-stick spray.
  2. Coat with olive oil, cumin, salt and pepper.
  3. Slice bell peppers into bite-size pieces and chop cilantro.
  4. Mix with corn, cumin and lime juice then pour around pork in dish and cover.
Cooking
  1. Uncover and bake in a 400 degree oven for 25-35 minutes or until pork is cooked through and corn is slightly browned.
  2. Serve with sliced avocado, feta, squeeze of lime and side salad.
