Smoked Sausage Pie

Ingredients

Prep
  • 1 pie crust
  • 1 t olive oil
  • 1/2 C frozen chopped onion
  • 1 C sausage
  • 9 oz frozen chopped spinach
  • 2 C sour cream
  • 2 C shredded cheddar cheese
  • 4 eggs
  • 1/2 C whipping cream
On Cooking Day
  • none

Instructions

To Assemble
  1. Unroll pie crust and stretch to fill deep dish pie plate (9×9 baking dish).
  2. Prick pie crust several times with fork.
  3. While baking, cook onion in oil for 2-3 minutes. Stir in sausage and spinach.
  4. In large mixing bowl transfer sausage and onion mixture folding in sour cream and cheese.
  5. In small bowl, Beat eggs and whipping cream until blended then add into sausage mixture.
  6. Pour mixture into pie crust.
  7. Store in freezer.

  1. Bake at 375 for 1 hour.
