Slow Cooker Whole Roasted Lemon Caper Chicken – CE

Ingredients

Prep
  • 1 yellow onion
  • 2 lemons
  • 1 bunch kale
  • 4 lb whole chicken
  • salt and pepper to taste
  • 3 t minced garlic
  • 1 t oregano
  • 2 T capers
  • salt and pepper to taste
On Cooking Day
  • 1 lb baby new potatoes

Instructions

To Assemble
  1. Cut onion in large chunks and slice lemons. Add to a large zipper bag. Rough chop kale and add to a different zipper bag.
  2. Place whole chicken in the same bag as onions and lemons. Add remaining ingredients.
To Cook
  1. Place potatoes in bottom of slow cooker and put chicken mixture on top of potatoes.
  2. Cook on low for 8-10 hours. Remove chicken and place kale in slow cooker (with juices) for 5 minutes.
