Slow Cooker Tomato Basil Soup – CE
Grilled cheese sandwiches

Ingredients

Prep
  • 1/3 C fresh basil
  • 56 oz crushed tomatoes
  • 8 oz tomato sauce
  • 12 oz tomato-vegetable juice cocktail v8
  • 1 t salt
  • 12 slices whole wheat bread
  • 6 slices mozzarella cheese
On Cooking Day
  • 15 oz chicken broth
  • 1 C heavy cream
  • 1/4 C butter

Instructions

To Assemble
  1. Chop basil and add to large zipper bag along with next 4 ingredients. Zip to seal and squish around to mix.
  2. Assemble grilled cheese sandwiches with bread and cheese and store in container with lid.
To Cook
  1. Pour prep bag ingredients and chicken broth into slow cooker.
  2. Cook on low for 6-8 hours. Stir in heavy cream and butter during the last 30 minutes.
  3. Cook grilled cheeses on grill pan or skillet (use butter on outside of sandwiches if desired).
