Slow Cooker Maple Pulled Pork – CE
sweet potatoes and green salad

Ingredients

Prep
  • 3 1/2 lb pork shoulder roast fat trimmed
  • 2 C frozen chopped onions
  • 1/2 C pure maple syrup
  • 1/2 C apple cider vinegar
  • 1 t salt
  • 6 small sweet potato
On Cooking Day
  • 10 C salad greens
  • 1 head Romaine lettuce optional

Instructions

To Assemble
  1. Add pork along with along with next 4 ingredients to a large zipper bag. Zip to seal and squish around to mix.
  2. Pierce sweet potatoes with fork and wrap each one in foil. Place in a large zipper bag.
To Cook
  1. Pour contents of zipper bag into slow cooker. Add a layer of foil on top of pork and place sweet potatoes on top.
  2. Cover and cook on low for 6-8 hours.
  3. Shred pork with two forks and return to slow cooker to mix with juices.
  4. Serve with green salad.
