Slow Cooked Vegetable Chili – CE

Ingredients

Prep
  • 2 zucchini medium size
  • 30 oz can black beans
  • 1 C frozen chopped carrots
  • 1 C frozen chopped onions
  • 1 C frozen corn
  • 2 T minced garlic
  • 1 T chili powder
  • 1 t cumin
On Cooking Day
  • 4 C chicken broth or vegetable broth
  • 6 C salad greens

Instructions

To Assemble
  1. Chop zucchini into bite size pieces and place in large zipper bag.
  2. Rinse and drain black beans and add to separate zipper bag.
  3. Add remaining ingredients to beans. Zip and squish to mix.
To Cook
  1. Add contents of bag (not zucchini) to slow cooker along with broth. Cook on low 6-7 hours.
  2. During last 20 minutes, add zucchini.
  3. Serve with green salad.
