Slow Cooked Turkey Porcupine Meatballs – CE

Ingredients

Prep
  • 2 lb ground turkey dark meat
  • 1 C brown rice dry
  • 2 eggs
  • salt and pepper to taste
  • 1 t Italian seasoning
  • 2 T minced garlic
  • 2 T parsley flakes
  • 1 lb mini carrots
  • 2 T honey
  • 2 T butter
On Cooking Day
  • 1/4 C cornstarch
  • 3 C chicken broth
  • 16 oz frozen green beans

Instructions

To Assemble
  1. Mix first 7 ingredients in a large bowl. Roll into a little larger than golf ball size meatballs and place in a large container with lid. For uniform size use large Ice Cream Scoop.
  2. Place carrots, honey and butter in a large sheet of foil. Fold up to make a packet.
To Cook
  1. Place meatballs in a slow cooker (in a single layer.. squeeze them in) sprayed with non stick spray.
  2. Mix broth and corn starch and pour over meatballs. Lay a sheet of foil on top of meatballs, then lay the carrot packet on top. Cook on low for 7 hours.
  3. Cook green beans according to package directions.

*be sure to use dark meat so the meatballs do not dry out as easily.
