Slow Cooked Stuffed Pepper Soup – F

Ingredients

Prep
  • 1 lbs extra lean ground beef 90/10 or leaner
  • 1/2 C frozen chopped onion
  • 2 C frozen chopped bell peppers
  • 14 oz fire roasted tomatoes
  • 14 oz tomato sauce
  • 1 t dried oregano
  • 1 T minced garlic
  • 1 T Worcestershire sauce
On Cooking Day
  • 2 C beef broth
  • 2 bag steamers rice

Instructions

To Assemble
  1. Add all ingredients to large zipper bag. Squish to break up meat.
To Cook
  1. Slow Cooker: Pour contents of zipper bag along with beef broth into slow cooker and cook on low for 8 hours. Stir well to break up beef.
  2. Instant Pot: Pour contents of bag along with beef broth into IP. Cook 20 minutes and release pressure. Mix well to break up beef
  3. Cook rice according to package directions. Serve soup with rice.
