Slow Cooked Stuffed Pepper Soup – CE
salad and dinner rolls

Ingredients

Prep
  • 1 1/2 lb extra lean ground beef
  • 15 oz tomato sauce
  • 15 oz canned diced tomatoes
  • 1 C frozen chopped onion
  • 2 C frozen chopped bell pepper
  • 1 T minced garlic
  • 1/2 t dried marjoram
  • 1/2 t pepper
On Cooking Day
  • 16 oz beef broth
  • 10 C salad greens
  • 1 bag frozen brown rice steamers
  • 1 pkg dinner rolls

Instructions

To Assemble
  1. Add all ingredients to large zipper bag. Zip and squish to break up meat.
To Cook
  1. Add beef mixture to slow cooker along with beef broth. Mix and cook on low for 8 hours.
  2. Use a potato masher to break up meat if needed. Cook rice according to package directions.
  3. Ladle soup into bowls and top with rice.
  4. Serve with salad and dinner rolls.

*must use extra lean 90/10% – 98/2% meat.
