Slow Cooked Pumpkin Pie Oatmeal

Ingredients

Prep
  • 2 C steel cut oats or old fashioned (not quick)
  • 7 C water
  • 12 oz can pumpkin puree
  • 1/2 t salt
On Cooking Day
  • 1 T pumpkin pie spice
  • 1 T vanilla extract
  • 1 C brown sugar
  • 1 C chopped pecans
  • 1 C raisins optional

Instructions

To Assemble
  1. Add all ingredients to slow cooker and mix well.
To Cook
  1. Cook on WARM 7-8 hours or low 3-4 hours. Stir in spice and vanilla last 30 minutes of cook time.
  2. Mix brown sugar, pecans and raisins and top oatmeal before serving.
