Slow Cooked Pulled Jerk Chicken Sandwiches – C
pineapple salsa and sweet potato fries

Ingredients

Prep
  • 6 boneless chicken breasts
  • 1 T olive oil
  • 2 T jerk seasoning
  • 2 T brown sugar
  • 1/4 t black pepper
  • 1/4 t cayenne pepper
  • 20 oz can pineapple tidbits or pineapple chunks, chopped
  • 1/4 C chopped bell pepper
  • 1/4 C chopped red onions
  • 2 T freshly chopped cilantro
On Cooking Day
  • 1 C apple juice
  • 1 pkg hamburger buns or Hawaiian buns
  • 1 pkg frozen sweet potato fries

Instructions

To Assemble
  1. Place first 6 ingredients in a large zipper bag. Zip to seal and squish around to mix.
  2. Drain pineapple and add to a container with a lid along with remaining ingredients. Toss to mix. Store in the refrigerator until ready to serve.
To Cook
  1. Place chicken mixture in slow cooker with apple juice. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  2. Shred chicken and add to hamburger buns. Top with pineapple salsa.
  3. Cook sweet potato fries according to package directions.
