Slow Cooked Lasagna Soup – C

Ingredients

Prep
  • 1 1/2 lb lean ground beef 90/10
  • 28 oz crushed tomatoes
  • 8 oz tomato sauce
  • 1 C frozen chopped onions
  • 2 t minced garlic
  • 1 T Italian seasoning
  • 1/4 t red pepper flakes or to taste
  • 1 bay leaf
  • salt and pepper to taste
On Cooking Day
  • 4 C chicken broth
  • 8 oz dried lasagna noodles about 8 noodles
  • 1 C shredded mozzarella cheese
  • 6 slices Texas Toast or garlic bread

Instructions

To Assemble
  1. Add all ingredients to a large zipper bag. Zip to seal and shake to mix.
To Cook
  1. Pour ground beef mixture into slow cooker along with chicken broth. Cook on low for 6 -7 hours. Break up lasagna noodles.
  2. Turn to high and add broken lasagna noodles the last 20 minutes or until noodles are desired doneness.
  3. Remove bay leaf.
  4. Cook Texas toast according to package directions. Top soup with cheese.

**must use lean ground beef or a combination of lean ground beef and ground Italian sausage.
