Slow Cooked Irish Beef Stew – B

Ingredients

Prep
  • 5 new potatoes
  • 1 1/2 lb lean stew meat
  • 1 1/2 C frozen chopped carrots
  • 1 C frozen chopped onions
  • 2 t minced garlic
  • 1/2 t dried thyme
  • 1/2 t dried rosemary
  • 1 large bay leaf
  • salt and pepper to taste
  • 3 T butter softened
  • 3 T flour
On Cooking Day
  • 32 oz beef broth
  • 8 oz frozen peas
  • 6 C salad greens

Instructions

To Assemble
  1. Chop potatoes into bite size pieces and add to large zipper bag.
  2. Add next 8 ingredients to potatoes. Zip to seal and squish around to mix.
  3. Mix last 2 ingredients (butter and flour) in a small container with lid.
To Cook
  1. Add meat mixture plus the beef broth to slow cooker. Cook on low for 8 – 10 hours.
  2. Add frozen peas and butter/flour mixture the last 30 minutes of cook time. Remove bay leaf before serving.
  3. Serve with green salad.

*best when cooked by day 3 or potatoes may start to brown.
