Slow Cooked Chorizo Chili – C

Ingredients

Prep
  • 1/2 lb Ground Chorizo Sausage cooked
  • 20 oz can black beans
  • 8 oz canned great northern beans
  • 10 oz can diced tomatoes
  • 10 oz frozen corn
  • 10 oz salsa verde
  • 1 t chili powder
  • 1 t ground cumin
  • 1 t minced garlic
  • salt and pepper to taste
On Cooking Day
  • 2/3 C water
  • 6 C salad greens

Instructions

To Assemble
  1. Remove casing from chorizo to a large zipper bag. Add all remaining ingredients to the same bag. Zip to seal and squish to break up the meat.
To Cook
  1. Pour meat mixture into slow cooker along with water. Cook on low for 7-8 hours. Use a potato masher to break up meat if needed.
  2. Serve chili with side salad.
