Ingredients
Prep
  • 3 chicken breasts or 2 large
  • 1 can white beans rinsed and drained
  • 1 can diced tomatoes
  • 1/4 C hot sauce we used Frank’s Red hot
  • 1 T ranch seasoning
  • 1 C frozen corn
  • 2 t onion powder
  • 1 T dried parsley flakes
On Cooking Day
  • 32 ounce chicken broth
  • 8 ounce cream cheese
  • 1/4 C blue cheese crumbles optional

Instructions
To Assemble
  1. Add all ingredients to large zipper bag. Zip to seal.
To Cook
  1. Pour chicken mixture into slow cooker and add 32 ounces chicken broth.
  2. Cook on low 6-8 hours.
  3. Shred chicken with two forks inside the slow cooker and add cream cheese.
  4. Cook 30 more minutes to melt cheese. Mix well before serving.
  5. Sprinkle with blue cheese crumbles if desired.
