Slow Cooked Buffalo Chicken Chili – CE

Ingredients

Prep
  • 3 celery stalks
  • 28 oz pinto beans or black beans
  • 2 T minced garlic
  • 1 C frozen chopped onions
  • 1 C matchstick carrots
  • 28 oz diced tomatoes
  • 1/4 C Frank’s red hot sauce
  • 2 T honey
  • 1 T cumin
  • 1 T chili powder
  • 1 T paprika
  • salt and pepper to taste
  • 3 boneless chicken breasts
On Cooking Day
  • 1/2 C blue cheese crumbles optional
  • 10 C salad greens
  • 4 C chicken broth

Instructions

To Assemble
  • Chop celery and rinse and drain beans and add to large zipper bag with remaining ingredients.
To Cook
  • Pour chicken mixture into slow cooker along with chicken broth and cook on low for 6-8 hours. Remove chicken and shred and return to soup.
  • Top with blue cheese crumbles if using and serve with salad.
