Slow Cooked Brown Sugar Glazed Pork Loin – C

Prep
  • 2 lb pork tenderloin
  • 2 T minced garlic
  • 1/4 C brown sugar
  • salt and pepper to taste
  • 3 T olive oil
  • 16 oz baby carrots
  • 6 potatoes small-for baked potatoes
On Cooking Day
  • 1/2 C water
  • 6 C salad greens
  • potato toppings (butter, sour cream, cheese, bacon bits)

Instructions

To Assemble
  1. Add first 6 ingredients to a large zipper bag. Zip and shake to mix to coat pork well.
  2. Wrap potatoes in foil.
To Cook
  1. Pour pork mixture and water into slow cooker, cover with foil and place foil wrapped potatoes on top, cook on low for 6-8 hours.
  2. Top baked potatoes with desired toppings, slice pork and serve with salad.
