Slow Cooked Beef Rolls – CE

Ingredients

Prep
  • 3 lb round steak 1/4 inch thick
  • 1/4 C Dijon mustard
  • 6 slices bacon
  • 1 can all natural beef broth
  • 1 C frozen chopped onions
  • 1/3 C flour
  • 1/2 C water
  • 1 T parsley flakes optional
On Cooking Day
  • 2 bag frozen mashed potato steamer
  • 16 oz frozen broccoli

Instructions

To Assemble
  1. Slice beef into 6 pieces. (individual serving size)
  2. Spread each slice of beef with mustard. Place 1 slice of bacon and roll up each slice and store in large zipper bag.
  3. Mix last 5 ingredients in medium bowl with lid.
To Cook
  1. Place beef rolls in slow cooker and pour broth mixture over top. Cook on low for 6 – 8 hours.
  2. Cook potatoes and broccoli according to package directions.
