Slow Cooked Beef Burrito Bowls – B

Ingredients

Prep
  • 2 1/2 lb beef chuck roast
  • 1/2 C frozen chopped onions
  • 1 T minced garlic
  • 2 T tomato paste
  • 3 T taco seasoning
  • salt and pepper to taste
  • 1/2 C salsa
On Cooking Day
  • 15 oz can black beans
  • 1 1/2 C frozen corn
  • 2 avocados
  • 2 bag frozen cauliflower rice
  • 6 C salad greens

Instructions

To Assemble
  1. Add all ingredients to large zipper bag. Zip to seal and squish around to mix.
To Cook
  1. Add prepped ingredients to slow cooker. Cook on low for 8-10 hours.
  2. During last 30 minutes add black beans (drained and rinsed) and corn.
  3. Shred beef. Cut avocado into bite-sized pieces.
  4. Cook cauliflower rice according to package directions.
  5. Build bowls with cauliflower rice, beef mixture, salad greens, and avocado.
