Slow Cooked Apple Pork and Acorn Squash – CE

Ingredients

Prep
  • 3 acorn squash
  • 3 T maple syrup
  • 1 t ground cinnamon
  • 1 T butter
  • 6 pork chops
  • 1 C apple juice
  • 1 t dried thyme
  • 1/2 t ground cinnamon
  • 1 T apple cider vinegar
  • salt and pepper to taste
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. Slice each squash in half, scoop out seeds and discard. * may also cut into slices or wedges to fit into slow cooker better.
  2. Sprinkle each with next 3 ingredients and store in large zipper bag. Zip to seal and squish around to coat.
  3. Add next 6 ingredients to another large zipper bag. Zip to seal and squish around to mix.
To Cook
  1. Place pork chops in bottom of slow cooker, cover with foil and add squash halves. Cook on low for 6 hours.
  2. Serve with green salad.
