Skillet Cheesy Taco Pasta – C

Ingredients

Prep
  • 1 lb ground beef
  • salt and pepper to taste
On Cooking Day
  • 8 oz dried penne pasta or similar
  • 3 T taco seasoning
  • 2 C water
  • 1 C mild salsa
  • 1 1/2 C shredded Mexican cheese blend
  • 1/2 C sliced black olives
  • 6 C salad greens

Instructions

To Assemble
  1. Add ground beef to a large zipper bag. Season with salt and pepper. Zip to seal and squish to mix.
To Cook
  1. Cook ground beef in a large skillet over medium heat. Drain any excess grease.
  2. Stir taco seasoning into ground beef then add in water, salsa and dry pasta noodles.
  3. Bring mixture to a boil. Stir, cover and reduce heat to a simmer.
  4. Cook for about 15 minutes until pasta is tender. Remove from heat and stir in cheese.
  5. Top with sliced black olives if desired. Serve with salad.
