Black beans and salsa

easy shrimp tacos

Ingredients

Prep
  • 1 lbs cooked medium shrimp peeled and deveined
  • 6 oz fat free Greek yogurt
  • 1/4 C fresh cilantro
  • 2 T lime juice
  • 1/2 t cayenne pepper
  • 16 oz canned black beans
  • 1/4 C salsa
On Cooking Day
  • 12 flour tortillas corn tortillas or lettuce cups
  • 3 C shredded lettuce or shredded cabbage

Instructions

To Assemble
  1. Mix shrimp with next 4 ingredients in a large container with lid. Stir to combine.
  2. Rinse and drain black beans, mix in salsa and add to small bowl with lid.
To Cook
  1. Serve tacos cold (or warm in microwave) on tortillas with shredded lettuce and salsa.
  2. Warm black beans in microwave.
