Sheet Pan Steak Fajitas – W30

Ingredients

Prep
  • 2 lb flank steak
  • 2 bell peppers
  • 1 red onion large
  • 2 lime divided
  • 3 T olive oil
  • 2 t chili powder
  • 1 t garlic powder
  • 1 t onion powder
  • 1 t cumin
  • 1/2 t oregano
  • salt and pepper to taste
On Cooking Day
  • 1 bunch cilantro
  • 1 jalapeno optional
  • 2 avocados
  • 8 cups salad greens
  • 1 bag frozen cauliflower rice

Instructions

To Assemble
  1. Slice steak across the grain and place in a large zipper bag. Slice peppers and onion and add to same bag.
  2. Cut one lime into wedges and put in a small container with a lid. Zest 1 teaspoon and juice remaining lime and add to bag along with next 6 ingredients. Season with salt and pepper. Zip to seal and shake to mix.
To Cook
  1. Place prepared steak, peppers and onions mixture on a large baking sheet sprayed with cooking spray or lined with foil.
  2. Bake in 450 degree oven for 12 – 15 minutes or until desired doneness.
  3. While fajitas are cooking chop cilantro and jalapeno. Slice avocado. Cook cauliflower rice according to package directions.
  4. Serve on top of salad greens or over cauliflower rice with a lime wedge.
