Sheet Pan Spicy Pork Tenderloin – CE
rice, broccoli and carrots

Ingredients

Prep
  • 3 T red chili paste
  • 3 T coconut aminos or soy sauce
  • 3 T honey
  • 2 t minced ginger
  • 1 T minced garlic
  • 2 one pound pork tenderloins
  • 16 oz broccoli florets
  • 16 oz baby carrots
On Cooking Day
  • 2 bag frozen brown rice steamer

Instructions

To Assemble
  1. Mix first 5 ingredients in a small bowl.
  2. Place pork tenderloin in a large zipper bag and pour 2/3 of the sauce into the bag. Zip and shake to mix.
  3. Add broccoli and carrots to small baking dish sprayed with non stick spray and drizzle remaining sauce over top. Cover with foil.
To Cook
  1. Place pork tenderloin(s) on baking sheet sprayed with non stick spray.
  2. Baked tenderloin and covered vegetables in a 400 degree oven for 20-30 minutes or until pork is cooked through.
  3. Cook rice according to package directions.
