Sheet Pan Shrimp Boil – CE

Ingredients

Prep
  • 1 lb baby yellow potatoes
  • 1 package Andouille sausage or smoked sausage
  • 1 1/2 lb large raw shrimp peeled and deveined
  • 8 frozen mini corn cobs
  • 2 T olive oil
  • 1 1/2 T Old Bay Seasoning
  • 1 T minced garlic
  • salt and pepper to taste
  • 1 lemon
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. Slice potatoes in half and place in large zipper bag. Drizzle with olive oil. Season with salt, pepper and a pinch of old bay seasoning. Zip to seal and shake to mix.
  2. Slice sausage into 2 inch pieces and place in another large zipper bag along with shrimp and corn.
  3. Add olive oil, garlic, and Old Bay Seasoning. Season with salt and pepper. Seal bag and shake to mix.
  4. Cut lemon into wedges and store in a small container with a lid.
To Cook
  1. Spray a large baking sheet with cooking spray. Add potatoes and bake at 400 degrees for 15 minutes.
  2. Add shrimp and sausage mixture with potatoes and bake for another 12-15 minutes longer until shrimp are cooked.
  3. Serve with green salad and lemon wedges.
