Sheet Pan Sesame Chicken and Veggies – CE

Ingredients

Prep
  • 6 boneless chicken breasts
  • 16 oz broccoli florets
  • 1 bell pepper any color
  • 8 oz sugar snap peas
  • 1/2 C soy sauce
  • 2 T Thai sweet chili sauce
  • 4 T honey
  • 4 t minced garlic
  • 2 t fresh ginger
On Cooking Day
  • 2 bag frozen rice steamers
  • sesame seeds for garnish
  • 1/4 C green onion for garnish

Instructions

To Assemble
  1. Cut chicken into bite sized pieces and add to large zipper bag.
  2. Slice the bell pepper, chop broccoli, and add to zipper bag along with sugar snap peas.
  3. In a small bowl with lid, add remaining ingredients. Pour half of the mixture into the bag and reserve remaining for cooking day.
To Cook
  1. Bake chicken and veggies on a sheet pan sprayed with non stick spray at 400 degrees for 20 minutes.
  2. Cook rice according to package directions.
  3. Drizzle reserved sauce over chicken and veggies and serve with rice. Garnish with sesame seeds and green onions (if using)
