Sheet Pan Sausage, Potatoes, and Veggies – C

Ingredients

Prep
  • 1 lb baby gold potatoes
  • 8 oz petite baby carrots
  • 24 oz smoked sausage
  • 1 bunch asparagus
  • 1 onion
  • 2 T olive oil
  • 2 T minced garlic
  • 1 t onion powder
  • 1 t paprika
  • 1 t oregano
  • 1 t dried basil
On Cooking Day
  • 6 dinner rolls

Instructions

To Assemble
  1. Cut potatoes into bite-sized pieces and add to a large zipper bag along with carrots.
  2. Cut sausage into 1 inch pieces. Trim woody ends off asparagus and discard. Add to another large zipper bag
  3. Slice onion and add to large zipper bag along with sausage and asparagus.
  4. Mix next two ingredients then divide between both bags, zip to seal and squish to coat.
  5. In a small bowl, add remaining ingredients. Mix together.
  6. Divide seasoning mix between both bags. Zip both bags and squish around to mix.
To Cook
  1. Pour potato bag ingredients onto one side of a sheet pan lined with foil and sprayed with non stick spray.
  2. Bake at 400 degrees for 20 minutes.
  3. Take out of the oven and add the other prepped ingredients to the other side of sheet pan.
  4. Bake an additional 10-15 minutes.
  5. Serve with dinner rolls.
