Sheet Pan Pork, Apples, and Asparagus- C

Ingredients

Prep
  • 6 bone-in pork chops
  • 1/4 C olive oil
  • salt and pepper to taste
  • 1 lb baby gold potatoes
  • 1 bunch asparagus
  • 1 apple gala or honeycrisp
  • 2 t brown sugar
  • 1 t cinnamon
  • 1/4 t ground ginger
  • 2 t southwest seasoning
On Cooking Day
  • none

Instructions

To Assemble
  1. Dice potatoes in bite size pieces and place in large zipper bag. Trim woody ends from asparagus, then cut asparagus into thirds and place in the bag with the potatoes. Add olive oil and salt and pepper to bag. Zip to seal and squish to mix.
  2. Cut apple into wedges and add to zipper bag. Add brown sugar, cinnamon, and ginger to the bag. Zip to seal and squish to mix.
  3. Place pork chops in large zipper bag with remaining olive oil and southwest seasoning. Zip to seal and squish to mix.
To Cook
  1. Add pork to sheet pan lined with foil and sprayed with non stick spray. Add veggies to a different section of the pan. Place apples next to pork in the same pan.
  2. Bake at 425 until a thermometer inserted in pork reads 145° and potatoes and apples are tender, 25-30 minutes. Let stand 5 minutes before serving.
