Sheet Pan Chipotle Lime Shrimp – C
potatoes, asparagus, and broccoli

Ingredients

Prep
  • 2 lb gold potatoes
  • 2 T olive oil
  • salt and pepper to taste
  • 2 lb large raw shrimp
  • 8 oz asparagus
  • 8 oz frozen broccoli
  • 1/4 C butter
  • 3 T lime juice
  • 2 t chipotle chili powder can substitute chipotle in adobo
On Cooking Day
  • 1/4 C fresh cilantro optional garnish

Instructions

To Assemble
  1. Cut potatoes into small, bite-sized pieces.
  2. In a large zipper bag, add potatoes, olive oil, and salt and pepper. Zip to seal and squish around to mix.
  3. In a separate large zipper bag, add shrimp, broccoli, and asparagus.
  4. Melt butter in a small bowl. Combine butter, chili powder, and lime juice. Pour into shrimp/veggie bag.
To Cook
  1. Preheat oven to 400 degrees.
  2. On a sheet pan sprayed with non-stick spray, bake potatoes at 400 degrees for 25-30 minutes.
  3. Add shrimp/veggie bag to sheet pan and bake for another 10 minutes or until shrimp is cooked through.
  4. Garnish with fresh cilantro.
