Sheet Pan Beef and Broccoli – W30
cauliflower rice and spring salad

Ingredients

Prep
  • 1 1/2 lbs sirloin steak
  • 16 oz broccoli florets
  • 1 green onion
  • 1/4 C coconut aminos like Coconut Secret
  • 2 t minced ginger
  • 2 t minced garlic
  • 1/2 t salt
  • 1/4 t black pepper
  • pinch red pepper flakes optional
On Cooking Day
  • 16 oz frozen cauliflower rice
  • 9 oz salad greens

Instructions

To Assemble
  1. Thinly slice steak against the grain and put in a large zipper with broccoli. Chop green onion and add to a small bowl along with remaining ingredients. Mix together and drizzle half of the sauce over meat and broccoli. Zip to seal and shake to mix. Reserve the remaining sauce for cooking day.
To Cook
  1. Preheat oven to 425 degrees. Line a large baking sheet with aluminium foil sprayed with non-stick cooking spray. Pour beef and broccoli mixture on baking sheet, discarding marinade if desired.
  2. Bake for 12-15 minutes until steak is cooked as desired. (12 minutes for rare, 15 minutes for well done). Toss with reserved sauce.
  3. Cook cauliflower rice per package directions. Serve over cauliflower rice and spring salad on the side.
