Sheet Pan Balsamic Shrimp and Veggies – CE

Ingredients

Prep
  • 1 1/2 lb large shrimp peeled
  • 2 sweet potatoes
  • 2 zucchini
  • 1 bell pepper any color
  • 1 red onion
  • 1/4 C olive oil
  • 3 T balsamic vinegar
  • 1 T lemon juice
  • 1/2 t Worcestershire sauce
  • salt and pepper to taste
On Cooking Day
  • 2 bag steamers brown rice

Instructions

To Assemble
  1. Add shrimp to large zipper bag and set aside.
  2. Chop sweet potatoes into 1/2 inch pieces and add to another large zipper bag.
  3. Chop zucchini bell pepper and onion into 1-1 1/2 inch pieces and add to bag with sweet potatoes.
  4. Mix last 5 ingredients in a small bowl. Pour half over shrimp and half over vegetables. Zip bags and shake to mix.
To Cook
  1. Pour vegetables onto large baking sheet sprayed with non stick spray.
  2. Bake in a 375 degree oven for 15 minutes. Remove from oven and add shrimp and bake an additional 15 minutes or until shrimp are cooked. *watch closely to not overcook.
  3. Cook rice according to package directions.
