Sausage and Cabbage Skillet – CE

Ingredients

Prep
  • 1 onion
  • 1 t paprika
  • 1 t dried oregano
  • salt and pepper to taste
On Cooking Day
  • 1 1/2 lb ground Italian sausage
  • 1 T extra-virgin olive oil
  • 4 clove minced garlic
  • 1 bag coleslaw mix
  • 1 bag broccoli slaw

Instructions

To Assemble
  1. Cut onion in half and slice into half circles. Store in a medium bowl with a lid. Combine next three ingredients in a small container with a lid.
To Cook
  1. In a large saute pan (with high sides) brown ground Italian sausage on medium high heat until cooked through, about 5-7 minutes. Remove sausage from pan.
  2. Reduce heat to medium. Add olive oil and sliced onion to pan and cook until onion softens and begins to brown, about 6-8 minutes. Add garlic and seasoning mix, and cook for 30 seconds.
  3. Begin to add cabbage and broccoli slaws to pan. To have room for all of the vegetables, only add half of each bag at a time, and allow a few minutes for the vegetables to begin to wilt and make more room before adding next portion. Once all vegetables have been incorporated, return sausage to pan, and toss to combine. Serve.
