Salmon with Creamy Dill Sauce – CE

Ingredients

Prep
  • 1 1/2 lb baby gold potatoes
  • 6 salmon filets
  • 2 T olive oil
  • 1 T minced garlic
  • 1 t dried rosemary
  • 1 t dried oregano
  • salt and pepper to taste
  • 1/2 C plain Greek yogurt
  • 1/2 C mayonnaise
  • 1 t horseradish
  • 2 t lemon juice
  • 2 t dried dill
  • salt and pepper to taste
On Cooking Day
  • 20 oz frozen green beans

Instructions

To Assemble
  1. Chop potatoes into 1 inch pieces and add to large zipper bag.
  2. Place salmon in another large zipper bag.
  3. Mix next 5 ingredients in a small bowl and pour half over salmon and half over potatoes. Zip bags and shake to mix.
  4. Mix last 6 ingredients in another small bowl with lid. This will be the serving sauce.
To Cook
  1. Place salmon and potatoes on large baking sheet sprayed with non stick spray.
  2. Bake in a 375 degree oven for 25-30 minutes or until fish is cooked through and potatoes are tender.
  3. Cook green beans according to package directions.
  4. Serve with yogurt sauce.

Best when cooked on day 1 or 2.  Salmon should be one filet for each person.  Large filets may be purchased and cut into individual serving sizes.
