Roasted Shrimp with Tomatoes and Feta – B

Ingredients

Prep
  • 2 zucchini
  • 2 pint cherry tomatoes
  • 3 T olive oil
  • 1 t minced garlic
  • salt and pepper to taste
  • 2 lbs large raw shrimp peeled, tail on ok, it adds flavor
  • 2 T dried parsley
  • 1 T lemon juice
  • 1/2 C crumbled feta
On Cooking Day
  • 2 bag frozen brown rice steamer

Instructions

To Assemble
  1. Chop zucchini into thin bite size pieces and add to 9 x 13 baking dish sprayed with non stick spray.
  2. Add next 8 ingredients to baking dish and toss with tongs or hands to mix. Cover with plastic wrap.
To Cook
  1. Uncover and bake in oven at 450 degrees for 20 – 30 minutes or until shrimp are pink and cooked through.
  2. Cook rice according to package directions.

*Non seafood eaters, substitute with cubed chicken breast or steak.  May require longer cook time.
