Roasted Sausage, Peppers and Onions – C

Ingredients

Prep
  • 2 lbs smoked sausage
  • 2 bell peppers
  • 1 onion
  • 2 T balsamic vinegar
  • 2 t spicy brown mustard
  • 1 t dried Italian seasoning
  • salt and pepper to taste
On Cooking Day
  • 2 bag frozen mashed potato steamer

Instructions

To Assemble
  1. Slice sausage into 1 inch pieces. Place in large zipper bag.
  2. Slice peppers and onion into bite size pieces. Add to zipper bag.
  3. Add the next 3 ingredients into the zipper bag. Sprinkle with salt and pepper. Zip to seal and squish around to mix.
To Cook
  1. Pour sausage mixture onto baking sheet lined with foil and sprayed with non stick spray. Bake at 400 degrees for 20 – 25 minutes.
  2. Cook potatoes according to package directions.

*You can substitute zucchini for peppers (for non pepper eaters) or add them to the recipe.
